Happy Anniversary

Today Jeff and I celebrated our 4th wedding anniversary.  On Saturday we’ll be dining at Le Bernardin, but tonight we enjoyed a perfect evening at home together – Jeff cooked a wonderful dinner and we indulged in one of our favorite bottles of wine, Peter Michael Ma Belle-Fille Chardonnay.

We started with some cheese…

…and some meat.

Our favorite cheese accoutrements – honey and fig jam.

And we opened a bottle of 2007 Peter Michael Ma Belle-Fille….

…this wine is delicious, each sip is full of layered flavors.

And for dinner, Jeff made roasted cauliflower…

…corn and chorizo…

…which garnished the salmon with reduced balsamic vinegar and mashed yukon gold potatoes.

A wonderful night with my wonderful husband.

Roasted Corn Salad for Summer Barbeque

Jeff has taken a bit of a break from cooking this summer – except for the occasional fish tacos or side dish like this one and, of course, the wonderful cooking/ barbequing he did in Napa over 4th of July.

Jeff made this Roasted Corn Salad for a friend’s barbeque.  Fresh ingredients make this dish colorful and tasty.

Jeff's Roasted Corn Salad

Ingredients:  fresh corn on the cob, cherry tomatoes, red onion, fresh chopped, cilantro, olive oil, salt, pepper

Prep corn cobs with olive oil, salt and pepper, then roast on the grill or in the oven.  Slice corn kernels off the cobs.  Mix in sliced cherry tomatoes, diced red onion, chopped cilantro, some extra olive oil, salt, and pepper to taste.  That’s it!
